Chicken of the Woods Schnitzel

The tender outer margin, crumbed and fried, is the closest a fungus gets to a chicken escalope.

Never eat a wild mushroom on the strength of a website alone. Some deadly species look very like good edibles. Check every feature, and get an expert opinion if there is any doubt at all.

Ingredients

  • 400g young Chicken of the Woods, outer margin only
  • 2 eggs, beaten
  • 100g plain flour
  • 150g dry breadcrumbs
  • Oil for shallow frying
  • Lemon wedges

Method

  1. Slice the tender margin into finger-thick escalopes.
  2. Simmer in salted water for 5 minutes and pat dry. This matters: it must be cooked through.
  3. Coat in flour, then egg, then breadcrumbs.
  4. Shallow fry for 3 minutes each side until deep gold and cooked right through.
  5. Drain, salt and serve with lemon. If it is your first time, eat a small portion only.
