Giant Puffball Steaks

One puffball feeds a household. Cut it thick and treat it like a steak.

Never eat a wild mushroom on the strength of a website alone. Some deadly species look very like good edibles. Check every feature, and get an expert opinion if there is any doubt at all.

Ingredients

  • 1 giant puffball, pure white inside
  • 2 eggs, beaten
  • 100g seasoned flour
  • 150g breadcrumbs with a little grated hard cheese
  • Butter and oil for frying

Method

  1. Slice the puffball in half top to bottom first and check the flesh is evenly pure white. Discard it if there is any yellowing.
  2. Cut into 2cm slabs and trim off the skin.
  3. Flour, egg and crumb each slab.
  4. Fry in butter and oil for 3 minutes a side until golden.
  5. Serve with a sharp salad, or in a burger bun.
